Sandwich Schmanwich

We don't usually make sandwiches for dinner, but after the success of the BBQ Pulled Chicken Sandwiches (which even my southern friend Heather liked), we decided to try this Spicy Chicken Sandwich with Cilantro-Lime Mayo recipe from Cooking Light.

The recipe called for pulverized baked tostitos chips.  Who knew you can make breading from this?

It really was quite delicious. The cilantro-lime mayo had great flavor, and the chicken breading made of tostitos chips was awesome! And ~400 calories for a breaded chicken sandwich is not bad at all!

    I've had fun making breading out of, well, anything that can crumble! One of my old standards is Froot Loop Chicken Fingers and most recently, I pulverized two almond crunchy granola bars for honey chicken. My finicky hubby loved it!

  3. What an interesting idea to use Tostidos chips for breading! I can see lots of possibilities here. We have just started to eat more fish, and this could be yummy covering the fish in.

    Yes, the BBQ chicken sandwiches have become a "standard" in our house. It is something that is simple and I usually have the ingredients on hand.
