In case you're wondering why I didn't blog about running yesterday, it's because we didn't run! It was raining pretty hard Friday night, plus it was Todd's birthday, so we decided to sleep in on Saturday instead of running with our running club. Good thing, because it was raining in the morning on Saturday.
So instead of running, we decided to enjoy a relaxing day. Todd claimed it's his "birthday weekend", so he was still celebrating, LOL! We went to Zocalo for lunch. They give you chips and salsa plus nacho queso dip with your meal. It was really delicious, except that Todd hates cheese so he didn't eat that dip.
I took a two hour nap in the afternoon. Then I caught up on my Bible reading. For dinner, Todd made Tuscan-Style Potato Soup. It's even better than the version at Olive Garden (Zuppa Toscana)!
Today we went running at Miramar Lake after church. We can only slack off for so long! Especially since we ate fatty food yesterday, and we planned on eating some treats during the Super Bowl today. :-|
It wasn't super-sunny, which is actually nice for running. There were big puffy clouds at the lake.

I went out a little too fast in the first two miles, which resulted in feeling a little tired in the last two miles. After running, we went to our favorite Mexican restaurant Chile Peppers. I only had one chicken taco though, because I was expecting to eat some treats later in the day. :p
I had to work for a couple of hours for a deadline after lunch (I know, on a Sunday!). After that we watched the Super Bowl. I designed some templates on my laptop while watching the game.
We had this spread with some chips.
Peppermint mentioned to me before that she loves this stuff, so I had to try it. I thought it was too salty because I ate it with chips. I should try putting it on bread next time. I also had some hummus.
And Todd made Rice Krispie Treats with Pepitas and Cranberry. It was super-yummy!
I'm pretty happy that the Saints won the Super Bowl, because the Colts had won it recently already. And I'm a Drew Brees fan, since he used to be a Charger.

A week in the Caribbean would be nice..to bad I'm too busy to look into planning a trip :D. (OK, to be honest, the lack of funds also keep me from planning...)

I don't know which is making me more hungry right now - that soup or those unique Rice Krispie treats. Every time I pick up a pizza at Pazzo's now, I think of you and Todd since it's in the same little shopping area as Chile Peppers.

ReplyDeleteI didn't realize that Todd doesn't like cheese. After I read that I thought of all of the amazing recipes you have shared and the pictures of the delicious-looking food. And then I was like, "Were all of those without cheese?" That's kinda cool! We all have our likes and dislikes! Ha! I really like your page! It's perfect!!!

ReplyDeleteIt's from cooking light and they often push the boundary when it comes to lightening the calorie content. (Salt too for that matter.) This recipe is case in point. I found I needed to up the marshmallows/butter by a bit (10% ?) or decrease the rice krispies to make it work.
