When The Cat's Away

the mouse cooks stuff with cheese!  Ha ha ha ha ha!

Todd had a work department dinner to go to tonight, so I thought I would cook myself a new recipe called Bacon, Ranch, and Chicken Mac and Cheese. Todd is a cheese-hater, so I cook stuffs with cheese when he's not around. Yahoo! :p

The first part of the recipe is to make the sauce.

Then I added the cheese, dill, garlic powder, dried onion (I didn't have onion powder), and salt and stirred until the cheese melted into the sauce.  Then I added the cooked macaroni and chicken to the cheese sauce.

Then I put everything into an 8 inch casserole pan, sprinkled colby jack cheese on top, along with bacon, and put it in the oven to broil the top for a couple of minutes.

Our oven is powerful and the cheese on top started burning before time was up. Good thing I was watching it and took it out!

With some fresh ground pepper on top. Mine, all mine!

The homemade mac and cheese was a success. It's slightly healthier than it looks I guess. Cooking Light made me use reduced fat cheese and fat-free milk. If you're interested the recipe is here.

  1. Lol, this is so funny! I'm having a hard time understanding how one can NOT like cheese... :P I'm a cheese-addict. But I also like pie, unfortunately Daniel is no fan of crust and hence not pie. So when he is traveling I usually makes it only for me. Mmm, yummy!

    But that is the only good part with him away. I'm already a little saddened as he will leave on Saturday and won't be back until next Sunday. One weeks work in Beijing consumes two weekends as well. I'm glad for you that Todd was only away for one evening this time. :)

  3. I love mac & cheese. I'll have to try this healthy version. My version is full of fat but it's so good. In fact I'm having it for dinner tonight.

    Someday I will make beer cheese soup, I had it in a restaurant once and it was killer!

  5. I made this for dinner tonight, Christine, and it was a huge hit! Hubby and kids raved about it and it's rare that I can serve something that appeals to all! TFS! :)
