What I Cooked | January 2015

I had said that one of my goals in 2015 is to cook more.  We have been cooking dinner at home 4-5 times per week for years.  But Todd is the chef of our family and he’s the cooking expert.  I just reap the benefits.  Up until now anyways.  Today I want to share with you what I cooked in January, and what I’ve learned.

Skinnytaste Quinoa Fiesta Enchilada Bake

You can also see the whole pan of it in the first photo in the post.  I made this on 1/6/2015.  It was very flavorful and rather delicious! Took me almost an hour but included baking time.  Since there’s cheese in there, Todd wouldn’t eat it.  So I had this for 4-5 meals, LOL.  I would definitely make this again.  I think the chipotle in adobo sauce definitely gives this dish a smoky spicy flavor which I really liked.

Skinnytaste Kung Pao Chicken Zoodles for Two

I bought myself a Paderno Spiralizer to make zucchini noodles, or zoodles!  The tool turned out to be very easy to use.  Fast to assemble, fast to spiralize the zucchini, and clean up was fast.

I made this on 1/13/2015.  I really enjoyed the sauce that I made from the recipe.  I used rotisserie roasted chicken breast instead of raw chicken and that made it slightly faster.  I did find that after eating this meal, I was hungry two hours afterwards.  But it was rather good and I’d make this again.

Skinnytaste Shrimp Scampi Zoodles for Two

Yea I know, zoodles again!  This dish was definitely fast because there wasn’t that many ingredients. I made this on 1/19/2015.  Easy, fast, and quite good. I think I'll put less than 3 tbsp of lemon juice next time so it's not as tart.  But overall another winner.  I’m on a roll!  I made this because Todd doesn’t eat shrimp and I never get to eat shrimp at home.

Clinton Kelly Egg Muffins (or small frittatas)

I made this on Saturday 1/24/2015.  I used 8 eggs, 1/4 cup chopped ham, 1 red pepper chopped, and 2 strands scallions chopped. It made 9 muffins. Baked in 350 degree oven for 30 minutes.  I think next time I’ll use the convection function on the oven so it’s faster.  Leftovers heat well in the microwave so I had breakfast for a few days! (Todd doesn’t eat eggs.)

Skinnytaste Lasagna Soup

Made this on 1/26/2015.  Another dish with cheese that Todd won’t eat.  Except he did!  He ate it without the mozzarella cheese and ricotta parmesan herb cheese topping though.

This dish took me about an hour and 10 minutes, including 30 minutes of simmer time. Mine turned out thicker than the photos on Skinnytaste, so I added a little bit more water. Turned out great! Very yummy.

You can follow along my Pinterest board of stuff I cooked if you want to know before the monthly blog posts.  I am freaking amazed that I cooked five things this month all on my own!  I may just be able to survive (food-wise) without Todd.  NOT that I'd ever want to.  But this has made me much more confident in the kitchen.  And I actually find the chopping and cooking quite relaxing and enjoyable.  Who knew!
